Vegetable Medley

A tasty mix of winter vegetables. This recipe is super easy, and it gives you both your starch and your greens in a single dish.

Ingredients

  • 1 pound red potatoes thinly sliced
  • 2 zucchini sliced
  • 2 tablespoons butter
  • 3 tablespoons vegetable oil
  • salt to taste
  • pepper to taste
  • 3 teaspoons garlic powder
  • 2 teaspoons dried sage
  • 1/2 cup fresh shitake mushrooms chopped
  • 1 1/2 cup kale chopped
  • 1/2 cup chopped onions

Directions

Step 1

Warm oil and butter in a large skillet

Step 2

Add potatoes, pepper, salt, and garlic powder. Cook for 10 minutes at medium heat.

Step 3

Add Squash and onions. Cook for additional 10 more minutes

Step 4

Add kale and mushrooms. Cook for 5 minutes or until kale begins to wither.
